Wow, I think the Banana Chipotle Bread Worked!

Some may call me a social media whore. To those people, I say, clearly you have no idea what the definition of that term really is. Sure, I love the ability of facebook and twitter to bring people to the Eat it. Drink it. World, to the shop, to the theater, to J’s band…but that’s hardly a bad thing! And there are times when my hours of pouring over tweets actually provide super inspiration.

A few days ago, someone I follow, FoodBlogga, asked the question “What savory dish can I make with ripe bananas?” Instantly, literally, chipotle popped into my head. What better way to balance the sweet love of banana than to pop spicy, earthy chipotle into a dish? I suggested Chipotle Banana Bread, and went about my morning. When she tweeted back to see if I had a recipe (I obviously didn’t) it occurred to me I should try to make this myself and see what happens.

I took my usual banana bread recipe, which I’m certain is pretty much the same as everyone’s banana bread recipe, and tweaked. The first batch turned out quite impressively, I must say. The flavor was spot on, with the banana coming through in the front of the bite, and the chipotle warming up for the next few seconds. You taste the heat, but it’s definitely not overwhelming. My plan is to download with baking goddess L this afternoon for thoughts, and to figure out how to make it a bit more moist…that was my only real complaint.

I’ll say this for J, he knows how he likes things. During out amazing Pork dinner the other night, he took the bread, spread it with maple butter (made by moi of course) and seasoned it with french sea salt, black pepper, and a little bit of ancho chili powder. Through it in the toaster until it was just lightly toasted and spread with another dollop of the butter. I had a tiny piece, as I was trying to keep that meal as healthy as I described, but the flavor was amazing! If you make the bread, I highly recommend giving his situation a try!

So, see? All that time I spend on my iPhone on Twitter really is for good.

Hey Foodblogga, how’d it go for you?

Chipotle Banana Bread
3 or 4 ripe bananas, smashed
3 chipotle, chopped
1/3 cup melted butter
1/3 C Agave (or 1/2 C sugar)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of whole wheat pastry flour

Preheat the oven to 350°F.

With a potato masher, mash bananas. Mix in chopped chipotles with a wooden spoon.

Mix butter into the chipotle and bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.

Pour mixture into a buttered 4×8 inch loaf pan. Bake for 40 minutes (check with a toothpick.)
Cool on a rack. Remove from pan and slice to serve.

For a Great Treat:
Spread with maple butter (good maple syrup whisked into softened butter) and sprinkle salt, pepper, and ancho (or pasilla, or some nice flavored) chili powder. Toast, add small pat of maple butter, serve.

I didn’t actually end up making it, but now that I’ve seen yours, I think I’ll try it! You prove that Twitter isn’t a waste a time, or of bananas. ;)
