While prepping for dinner last week, I was shopping at the market, trying to come up with a side option, due to J’s “I can’t eat watermelon salad again this week” statement. Here’s the thing. The markets are full of deliciousness right now, and I wanted to experiment with something new, but using a classic dish (in this house anyway) for inspiration. And, because we got our new bad ass grill, I decided I wanted to use it for this particular brand of delicious. Well, that, and because I love grilled fruit.
Peaches are insane right now. Gorgeous, ripe, and almost too hard to keep in the house–they tend to turn from perfect to mushy messy goodness in about 18 hours. And knowing the beauty they hold, I thought they’d be the perfect pair for some spice, some salt, and some heat. This spicy grilled peach and feta salad was the perfect balance, and it was the first time I’ve made it! You could totally add some green tomatoes, chop it up a bit finer, and top a great chicken breast of piece of fish. It’s versatile, juicy, and damn good.
Seasonal, healthy, and super easy. You have no reason not to make it this week!
