I have to admit, I didn’t originate this one. I mean, I love cauliflower, and I’ve made it countless ways, even in the oven, but this genius comes straight from our friend N, who makes it time and time again in the winter. It was actually one of the first things he cooked for me.
It’s the thick cut of the cauliflower, coupled with the spices, that really drive this home for me. It makes an excellent side for any meal, but especially one with something saucy and good that you’d ordinarily pair with polenta, bread or potatoes. It’s healthy, it’s tasty, and it couldn’t be easier. And did I mention it tastes awesome cold, the next day?
What more could you want out of a seasonal vegetable, right?
