There are many things I’m good at in the kitchen, and many things I can either figure out rather easily or totally fake my way through. Soup to stew, steak to pasta, I can work something out. But there is one job, one task, that tends to scare me into submission every time: the hors d’oeuvres, or in Jill speak, the app.
For me, if I’m hosting, this event usually involves a big wooden board, some cheese and bread or crackers, some sausage if I have, and a jar of something I’ve pickled. Occasionally hummus makes its way to the table, and I do make a bomb guacamole. Sure, I have my Spicy String Beans, but those are messy to eat, and slightly time consuming to prepare, especially if you’re going to be at someone else’s home.
Which was the case for this particular pickle I found myself in. We were having dinner with friends and I was tasked with bringing an appetizer. Knowing that I would also be feeding our vegetarian friends, and also trying to shop somewhat on a budget (cheese really gets up there, doesn’t it?) I literally found myself in our local market, turning around and around for what seemed like hours trying to find inspiration. Eventually, I did, in a tube of prepared polenta, a clamshell of Organic Arugula, and a brick of Asiago cheese.
It turned out strikingly well, and I put a proverbial notch in my headboard of recipes. I’d like to do this again, with homemade polenta and perhaps, ramp pesto when the time arrives. But all in all, it was good…snackable, healthy, easy, and apparently a crowd pleaser as I went home with half as much pesto and a clean plate.
