Alright, here’s the scoop. Our friends just opened up this amazing, local meat shop, aptly named, Local. Housemade bacon and sausages, all using local product from local farms. Duck confit, rilletes, and pancetta. That’s just the beginning of what’s about to be available. And of course, local grassfed beef from Middlebrook Farms.
I literally cannot say enough about how fabulous this shop is, and I’ll likely be talking nonstop about their products this summer. But to start, I have to tell you about our bacon cheeseburgers from the other night. We stopped into the shop for our first official visit, ready to buy. A pound of bacon, a pound of Middlebrook ground beef and some sausages were purchased, after tasting everything we could. (The pastrami by the way? Oh my.)
J was craving burgers, so it seemed obvious that I’d let him go at it in the kitchen, and did he. The burgers were ridiculous, and due to the lean nature of grassfed beef, he cut in the tiniest bit of bacon fat, rendered from frying the bacon.
Ok…so the bacon? Life changing, and I mean that with every bit of dramatic inflection possible. I fell in love. I’ve eaten it for the last three days, and am now going to have to reconfigure my entire diet to be able to eat this beautifully seasoned, perfectly potent pork product ever day.
It’s that good. J lightly seasoned the burgers with salt and pepper, grilled them to perfection, and we let them shine with the bacon, some cheese, and arugula. It was the perfect burger, likely the best he’s ever made, and I can’t wait to eat them nonstop this summer.
We also purchased some Italian sausage and Chorizo to be cooked tomorrow and Monday. Drool-worthy details to come.
